Low calorie and low carb baked turkey and eggplant diet recipe, good for a healthy lifestyle.
Ingredients
- 1 eggplant, large
- salt
- 1 1/2 cup onion, chopped
- 1 tablespoon low-calorie margarine
- 1 lb. ground turkey
- 2 cup tomatoes, chopped
- 1 teaspoon paprika
- 1 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
Topping
- 1 cup fresh bread crumbs, soft
- 1 tablespoon low-calorie margarine
- 1/4 cup cheddar cheese, grated
Instructions
- Wash and slice the eggplant; sprinkle with salt and set aside.
- Saute the onion in margarine; add the tomatoes and saute for 3 minutes.
- Add the turkey, paprika, nutmeg, and black pepper.
- Cook and stir until turkey is browned. Drain eggplant and rinse in cold water.
- In a flat baking dish, alternate layers of turkey mixture and eggplant.
- Cover and bake at 350 F for 30 minutes. Combine the bread crumbs, margarine and cheese; sprinkle on top of turkey and eggplant. Bake, uncovered, for 10 minutes more.
