Baked Turkey and Eggplant

Low calorie and low carb baked turkey and eggplant diet recipe, good for a healthy lifestyle.

Ingredients

  • 1 eggplant, large
  • salt
  • 1 1/2 cup onion, chopped
  • 1 tablespoon low-calorie margarine
  • 1 lb. ground turkey
  • 2 cup tomatoes, chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper

Topping

  • 1 cup fresh bread crumbs, soft
  • 1 tablespoon low-calorie margarine
  • 1/4 cup cheddar cheese, grated

 

Instructions

  1. Wash and slice the eggplant; sprinkle with salt and set aside.
  2. Saute the onion in margarine; add the tomatoes and saute for 3 minutes.
  3. Add the turkey, paprika, nutmeg, and black pepper.
  4. Cook and stir until turkey is browned. Drain eggplant and rinse in cold water.
  5. In a flat baking dish, alternate layers of turkey mixture and eggplant.
  6. Cover and bake at 350 F for 30 minutes. Combine the bread crumbs, margarine and cheese; sprinkle on top of turkey and eggplant. Bake, uncovered, for 10 minutes more.
