Beef and Rice Casserole

Enjoy this low calorie beef and rice casserole diet recipe with the whole family.

Ingredients

  • 3 oz. ground beef
  • 1 T. onion, chopped
  • 1 T. celery, chopped
  • 3/4 c. condensed chicken gumbo soup
  • 1/4 c. water
  • 1/2 c. rice, uncooked
  • 1/4 c. condensed cream of mushroom soup
  • salt and pepper to taste

Instructions

  1. Combine ground beef, onion, and celery with a small amount of water in a saucepan.
  2. Boil until onion is tender; drain.
  3. Combine condensed chicken gumbo soup, water, and rice.
  4. Simmer until all moisture is absorbed.
  5. Mix beef mixture, rice, and mushroom soup; pour into a small greased casserole dish.
  6. Add salt and pepper. Bake at 350 F for 25 minutes.
