Eggs a la King

Want to take the throne and all the riches? Start with this low calorie eggs a la king diet recipe.

Ingredients

  • 2 T. butter
  • 3 T. all-purpose flour
  • 2 c. skim milk
  • salt and pepper to taste
  • 6 eggs, hard-cooked
  • 3 small carrots, sliced and cooked
  • 1/3 c. peas, cooked
  • 1/3 c. snow-capped mushrooms, sliced and cooked
  • 1 medium pimiento, sliced and cooked
  • fresh parsley for garnish (optional)
  • 6 bread slices, toasted

t. = teaspoon, T. = Tablespoon, c. = cup

 

Instructions

  1. Melt butter in top of a double boiler. Blend in the flour; add the milk and stir until sauce thickens.
  2. Season with salt and pepper and cook 3 minutes longer.
  3. Slice or chop the eggs. Gently fold eggs, carrots, peas, and mushrooms into the sauce.
  4. Place toast on heated serving plates.
  5. Evenly divide egg mixture among the 6 pieces of toast. Arrange pimiento slices in crisscross fashion over the top of egg mixture.
  6. If desired, garnish plate with fresh parsley.

Yields 6 servings
