Glorified Salmon

What can be more delicious than salmon? Glorified salmon, low in calories and carbs of course.

Ingredients

  • 1 lb. can salmon, drained, boned, and flaked
  • 2 c. fresh bread crumbs
  • 1 small onion, finely chopped
  • 1/2 c. cheddar cheese, shredded
  • 1/2 c. fresh parsley, finely snipped
  • 2 T. pimiento
  • 3 eggs
  • 1 c. skim milk
  • 1/4 c. lemon juice
  • salt and pepper to taste

t. = teaspoon, T. = Tablespoon, c. = cup

 

Instructions

  1. Combine salmon, bread crumbs, onion, cheese, parsley, and pimiento in a large bowl; work with your hands or a spoon to mix.
  2. Beat together the eggs, milk, lemon juice, salt, and pepper.
  3. Pour and stir into the salmon mixture.
  4. Turn into a greased 1 1/2 qt. casserole. Place salmon casserole in a baking dish that contains 1 in. of hot water. Bake at 350 F for 1 hour or until knife inserted in middle comes out clean.
