Mushroom and Watercress Salad

Healthy mushroom and watercress salad. Delicious too!

Ingredients

  • 3 c. snow-white mushrooms, medium size
  • 2 T. fresh lemon juice
  • 2 T. white wine vinegar
  • 2 T. olive oil
  • 1/4 c. water
  • 1/2 t. salt
  • 1/4 t. dried tarragon, crushed
  • 1/4 t. ground basil
  • 1 c. fresh watercress, chopped

t. = teaspoon, T. = Tablespoon, c. = cup

 

Instructions

  1. Clean and slice mushrooms, place in a medium bowl.
  2. Mix together the lemon juice, vinegar, oil, water, salt, tarragon, and basil.
  3. Pour dressing over mushrooms, mixing carefully to completely coat the mushrooms.
  4. Marinate overnight in the refrigerator.
  5. Just before serving, drain extra dressing from mushrooms, add watercress and toss to completely mix.
  6. Divide among 8 chilled salad plates.

Yields 8 servings
