Healthy mushroom and watercress salad. Delicious too!
Ingredients
- 3 c. snow-white mushrooms, medium size
- 2 T. fresh lemon juice
- 2 T. white wine vinegar
- 2 T. olive oil
- 1/4 c. water
- 1/2 t. salt
- 1/4 t. dried tarragon, crushed
- 1/4 t. ground basil
- 1 c. fresh watercress, chopped
t. = teaspoon, T. = Tablespoon, c. = cup
Instructions
- Clean and slice mushrooms, place in a medium bowl.
- Mix together the lemon juice, vinegar, oil, water, salt, tarragon, and basil.
- Pour dressing over mushrooms, mixing carefully to completely coat the mushrooms.
- Marinate overnight in the refrigerator.
- Just before serving, drain extra dressing from mushrooms, add watercress and toss to completely mix.
- Divide among 8 chilled salad plates.
