New Potato Roast

A healthy side to any lunch or dinner meal. Low in carbs and fairly easy to make.

Ingredients

  • 2 lbs. small new potatoes
  • 2 tablespoons olive oil
  • 1/3 cup low-calorie margarine
  • salt and pepper to taste
  • 2 tablespoons fresh parsley, finely snipped

Instructions

  1. Peel and trim potatoes into smooth ovals.
  2. Heat olive oil in a heavy skillet.
  3. Add potatoes and saute over high heat, rotating potatoes until they are golden on all sides. (You may need to do these in several batches.)
  4. With a slotted spoon, place potatoes in a baking dish or casserole.
  5. Drain any excess oil from skillet. Melt margarine in same skillet and brown slightly. Add salt and pepper to the margarine and pour over potatoes.
  6. Bake at 350 F for 15 to 20 minutes until potatoes are tender, stirring occasionally.
  7. Transfer to a heated serving dish. Sprinkle with fresh parsley.

  • 15g carbohydrates
