A healthy side to any lunch or dinner meal. Low in carbs and fairly easy to make.
Ingredients
- 2 lbs. small new potatoes
- 2 tablespoons olive oil
- 1/3 cup low-calorie margarine
- salt and pepper to taste
- 2 tablespoons fresh parsley, finely snipped
Instructions
- Peel and trim potatoes into smooth ovals.
- Heat olive oil in a heavy skillet.
- Add potatoes and saute over high heat, rotating potatoes until they are golden on all sides. (You may need to do these in several batches.)
- With a slotted spoon, place potatoes in a baking dish or casserole.
- Drain any excess oil from skillet. Melt margarine in same skillet and brown slightly. Add salt and pepper to the margarine and pour over potatoes.
- Bake at 350 F for 15 to 20 minutes until potatoes are tender, stirring occasionally.
- Transfer to a heated serving dish. Sprinkle with fresh parsley.
