Slipper Lobster Casserole

Reward yourself with this easy to make Slipper Lobster Casserole diet recipe.

Ingredients

  • 1 pkg. Island Queen slipper lobster tails
  • 2 T. butter
  • 1 T. onion, minced
  • 2 t. salt
  • 1 1/2 t. paprika
  • 1/2 t. black pepper
  • 1 qt. skim milk
  • 3 T. all-purpose flour
  • 1/2 c. dry sherry
  • 12 oz. pkg. wide noodles, cooked

t. = teaspoon, T. = Tablespoon, c. = cup

 

Instructions

  1. Cook lobster as directed on the package; cool.
  2. Discard shells and cut lobster into bite-sized pieces. Melt butter in a skillet.
  3. Add the onion, salt, paprika, and pepper.
  4. Combine milk and flour in a bowl; mix to completely blend and pour into the skillet. Cook and stir sauce over low heat until thickened; stir in the sherry.
  5. Combine noodles, sauce, and half of the lobster pieces in a 3 qt. casserole.
  6. Bake, uncovered, at 375 F for 25 minutes or until hot and bubbly.
  7. Place remaining lobster pieces on top of noodle casserole.
  8. Return to oven for 10 more minutes.
