Tomato Beef Bouillon

Delicious tomato beef bouillon is sure to keep those calories and carbs in check.

Ingredients

  • 2 T. margarine
  • 1/4 c. onion, chopped
  • 46 oz. tomato juice
  • 2 cans beef broth or
  • 2 1/2 c. beef broth
  • 1 bay leaf
  • 1 t. salt
  • 1/2 t. pepper

t. = teaspoon, T. = Tablespoon, c. = cup

 

Instructions

  1. Heat margarine in large saucepan.
  2. Add onion and cook until tender.
  3. Add tomato juice, beef broth (canned or homemade), bay leaf, salt, and pepper; beat thoroughly. Do not boil.
  4. Remove bay leaf. Ladle into warm bowls.

Yields 8 servings, 1 cup each
