With all the goodness of vegetables in this vegetable broth what else could be better? Low calories and low carbs must be it.
Ingredients
- 1 c. onion, chopped
- 2 c. carrots, diced
- 1 c. celery, chopped
- 2 c. spinach, cut in small pieces
- 2 c. tomato, peeled and chopped
- 1 bay leaf
- 2 T. parsley or parsley flakes
- 1/2 t. thyme
- 1 blade mace
- 1/4 t. garlic or garlic powder
- 1 T. Worcestershire
- salt to taste
t. = teaspoon, T. = Tablespoon, c. = cup
Instructions
- Place vegetables in large kettle.
- Cover with 2 to 3 qt. (2 to 3 L) water.
- Bring to boil; reduce heat and simmer for 2 hours.
- Stir frequently. Add seasonings. Simmer 1 hour. Strain.
- Add water to make 2 qt. (2 L).
