Vegetable Broth

With all the goodness of vegetables in this vegetable broth what else could be better? Low calories and low carbs must be it.

Ingredients

  • 1 c. onion, chopped
  • 2 c. carrots, diced
  • 1 c. celery, chopped
  • 2 c. spinach, cut in small pieces
  • 2 c. tomato, peeled and chopped
  • 1 bay leaf
  • 2 T. parsley or parsley flakes
  • 1/2  t. thyme
  • 1 blade mace
  • 1/4 t. garlic or garlic powder
  • 1 T. Worcestershire
  • salt to taste

t. = teaspoon, T. = Tablespoon, c. = cup

 

Instructions

  1. Place vegetables in large kettle.
  2. Cover with 2 to 3 qt. (2 to 3 L) water.
  3. Bring to boil; reduce heat and simmer for 2 hours.
  4. Stir frequently. Add seasonings. Simmer 1 hour. Strain.
  5. Add water to make 2 qt. (2 L).

Yields 2 qt. of broth
